Abstract:
Not only Easter Bunny, but probably we all love our Easter eggs. Did you ever asked yourself what makes a perfectly cooked egg and which aroma substances are defining the aroma. In this presentation you will get some of the answers about the reactions during the cooking process and the resulting aroma formation. Also some information will be provided for the impact on the appearance and the aroma of eggs by different process technologies like fermentation. Finally some details about the quality of chocolate easter eggs and the analytical characterization will complete the talk.

Abstract:
Dioxins are belonging to the most highly-regulated environmental contaminants on the planet. They are carcinogenic and therefore harmful to human health. Being persistent organic pollutants, dioxins do not degrade in the environment and bioaccumulate in the food chain. They can be found in air, water and contaminated soil, and are produced unintentionally during industrial processes, including waste incineration, chemical manufacturing and paper bleaching. Shimadzu is offering the complete solution for Dioxin analysis using GC-MS/MS with a Boosted Efficiency Ion Source (BEIS) which maximizes ionization efficiency through optimizing the focal point of the electron beam in EI ionization. This achieves 4 times the sensitivity of previous ion sources, allowing reliable analyses at ultra-low concentration levels. For the fully automatic workflow, the companies Shimadzu, MIURA and BUCHI Laboratory Equipment are partnering to offer the most powerful solution for extraction, clean-up and GCMS analysis on the global scale.
