Complete Solution for beer analysis

Beer is one of the favorite alcoholic beverages in the world with a high level of quality, reaching back to the German beer purity law from 1516. Nowadays the quality standards for beer analysis are defined by the Central European Commission for Brewing Analysis (MEBAK) and the European Brewery Convention (EBC), representing technical and scientific interests of the brewing sector in the European countries. These regulations include the determination of numerous elements (such as Arsenic, Calcium, Copper, Sodium, Potassium, and more), anions (such as nitrate and sulfite) as well as organic components (ethanol, glycerine) and last not least pesticides and mycotoxins. In order to maintain the high level of quality, chemical investigations have to be performed, using different analytical techniques like spectroscopy, chromatography, mass- spectrometry to quantify all the potential contaminants.Shimadzu offers a wide range of analytical equipment and can provide appropriate configurations and applications as a total solution for beer analysis.

Analysis of Volatile Sulfur Compounds in Beer Using Nexis™ SCD-2030

Volatile sulfur compounds in beer can be generated during production and storage. These sulfur compounds give beer their distinct aroma and flavor characteristics and can have a significant impact on product quality. However, even trace-level concentrations of sulfur compounds can affect the flavor characteristics and quality of beer. Analysis of sulfur compounds with high sensitivity is required for accurate quality control and product development. We analyzed volatile sulfur compounds in three commercially available beer samples using gas chromatography (GC) with headspace (HS-20) and sulfur chemiluminescence detection (SCD).

High Speed Analysis of Iso-α-Acids, α-Acids, and Humulinones in Beer 

Hops have been dominating the flavour in beer ever since the ‘Reinheitsgebot’, the German beer purity law of 1516, stipulated that hops were one of four allowable ingredients in brewing. Not only do hops help to prevent spoilage in beer, they also counter the sweetness of malted grains with bitterness, thus adding flavour. This article introduces a simultaneous analysis of iso-α-acids, α- acids and humulinones in five types of beer using a Shimadzu Nexera XR high-performance liquid chromatograph, with reference to EBC 9.47 (EBC: European Brewery Convention). IBU was also measured with a UV-1900i UV-Vis spectrophotometer and compared with the results of the HPLC.

Using the LCMS-8060NX's world-class polarity reversal speed (5 ms) and data capture speed (1.5 ms), stable data was obtained even for high-speed analysis of multiple components. The IonFocus unit also introduces ions into the detector more efficiently, improving the signal intensity. Of 100 compounds tested in tea leaves, 96% showed excellent recoveries.
