Nowadays the quality standards for beer analysis are defined by the Central European Commission for Brewing Analysis (MEBAK) and the European Brewery Convention (EBC), representing technical and scientific interests of the brewing sector in the European countries. These regulations include the determination of numerous elements (such as Arsenic, Calcium, Copper, Sodium, Potassium, and more), anions (such as nitrate and sulfite) as well as organic components (ethanol, glycerine) and last not least pesticides and mycotoxins. In order to maintain the high level of quality, chemical investigations have to be performed, using different analytical techniques like spectroscopy, chromatography, mass- spectrometry to quantify all the potential contaminants. Highly Sensitive Analysis of Sulfur Compounds in Beer Using the Trap Mode of a Headspace Sampler

Volatile sulfur compounds, which are generated during the fermentation process of beer yeast, significantly contribute to the flavor and quality of beer. However, as these compounds exist in very small amounts, their detection requires pre-concentration techniques or the use of high-sensitivity detectors. In a previous Application News titled Analysis of Volatile Sulfur Compounds in Beer Using Nexis SCD-2030 we introduced an analysis method combining SCD (Sulfur Chemiluminescence Detector) and the Loop mode of the headspace sampler for the analysis of volatile sulfur compounds in beer. In this Application News, we will present the results of further investigation into achieving higher sensitivity using the Trap mode of the headspace sampler.

Analysis of Organic Acids in Beer by Nexera Organic Acid Analysis System

Ion-exchange chromatography (IC) with gradient elution or ion-exclusion chromatography (IEC) used in isocratic mode are established methods for analysis of organic acids. The acidic eluent usually applied for IEC improves separation of organic acids, but the sensitive conductivity detection is affected by low-ionization grade of the analytes at low pH. The IEC method used in this application news involves continuous addition of pH-buffering reagent after separation, to increase the pH level to close to neutral. This not only reduces background noise, but also dissociates organic acids from the substance being analyzed, enabling electrical conductivity detection of organic acids with high sensitivity and selectivity.
